Leafy Green Salad With Blue Cheese & Walnuts

With the perfect combination of crunchy walnuts, flavorful blue cheese, mildly sweet red onion, and a tangy lemon dijon dressing – your taste buds will be in heaven when eating this… Trust.

Plus, it’s super easy to make and doesn’t require many ingredients. In fact, you probably won’t even have to run to the store (well, except for the blue cheese maybe – but if you’re a true fan – you’ll have it lying around, right?!).

Feel free to use any of your favorite salad greens for this recipe – I used rucola and organic green leaf lettuce from my garden!

Now, let’s get down to the salad recipe, shall we? 🙂

Ingredients:

2 cups (about 2.5 oz; 70 g) of your favorite mixed salad greens (I used rucola and organic green leaf lettuce)
⅛ cups (about 0.5 oz; 15 g) walnuts
⅛ cup (about 1 oz; 30 g) crumbled blue cheese
⅓ (about 1 oz; 30 g) of a red onion (chopped)
1 tbsp (about 0.5 oz; 14g) Extra Virgin olive oil
¼ garlic clove (minced)
Salt (to taste)
Pepper (to taste)
1 tsp (about 0.2 oz; 5 g) Dijon mustard
1 tsp (about 0.2 oz; 5 g) freshly squeezed lemon juice

Instructions:
  • Mix Extra Virgin olive oil, Dijon mustard, lemon juice, garlic, salt, and pepper; Set aside while you mix the salad;
  • Toss mixed salad greens in a bowl together with walnuts, red onion, and crumbled blue cheese;
  • Top off with the prepared dressing and enjoy!
Notes:

This recipe calls for one main dish serving or two small side dish servings.
